Spaghetti with Zucchini Recipe

Friends, this Spaghetti with Crispy Zucchini recipe is how I want to make spaghetti forevermore. It’s crunchy, cheesy, summery, garden-y, and absolutely delicious!

I needed to make several substitutions because of our dietary sensitivities, and it still turned out delicious.

I used Jovial Grain-Free Cassava SpaghettiPork Panko Bread CrumbsNo Mato Sauce, and vegan mozzarella cheese. I’m only recommending these substitutions if you need them.

Last week, I attended my very first pottery class. My friend, Madeline (founder of Bunny’s Bite) and I took a 90 minute class at Murray Hill Pottery Works in Milwaukee. I made a set of plates that are currently being glazed, and I’ll share photos when they’re done.

Did I discover a hidden talent? No, definitely not. I called for help from the teacher more than anyone else in class. But, I’m proud of myself for showing up, tapping into my artistic side, braving being bad at something, and having loads of fun!


I enjoy working out for 45 - 60 minutes a day. Lately, I’ve been “stacking” multiple 5 - 15 minute workout videos per session to keep my workouts fresh & fun. Plus, with the change of “scenery,” it really makes the time fly! Following are some of the workouts that I’ve done over the past few days:
