Recipe of the Week
I first discovered the Crispy Sunchoke & Quinoa Salad with Kale Sprouts, Dried Cherries, and Mint recipe as one of my Hello Fresh meals. It was my introduction to sunchokes, and I'm so grateful they are now part of my repertoire.
Sunchokes, also known as Jerusalem artichokes, are a nutty, slightly sweet tuber that come from the root of wild sunflowers. When thinly sliced and roasted, they become delightfully crispy.
This salad is bursting with flavors and textures. Enjoy!
I picked up a copy of Radically Content this week and I am LOVING IT! Following is an excerpt that will give you the flavor of what the book is about:

You deserve to feel so radically satisfied and content in your own life that you couldn't care less whether anyone approves or disapproves of you.
Unlearn whoever you were taught to be, and become exactly who you are.
Write your own map. And live wildly, completely free.'
