Start your St. Patrick’s Day festivities with the Spinach and Herb Omelet - it’s loaded with greens and is incredibly delicious!  

(The recipe calls for 4 large eggs + 4 large egg whites, but I love whole eggs and use 6 large eggs instead.)

The minimalist way of life book suggestion

Over the past week, I read Erica Layne’s book, “The Minimalist Way: Minimalism Strategies to Declutter Your Life and Make Room for Joy.” Yes, the author shared strategies for decluttering “stuff,” but what really resonated with me was her overall approach to minimalism. Erica didn’t advocate for getting rid of as much stuff as possible, but rather clearly defining your core values so you can intentionally design your life around those values. She encouraged readers to strip away what doesn’t matter to make more room from what truly does.

I have a good understanding of my core values, but for fun, I took the Personal Values Assessment to narrow in on what really matters most to me.

My top results were: Health & Vitality, Authenticity, and Appreciation. With these guiding values top of mind, I’m going to make decisions that cultivate more of these experiences in my life.

Nourish Events, Chicago Makers Market

I was fortunate to be a vendor at the Chicago Artisan Market on Sunday. I always enjoy meeting new makers and trying their products. Following are some of my faves from the weekend that will certainly become staples in our household:

  • SipWith - Artisanal cocktail syrups perfect for both mocktails and cocktails. Revae, the owner, and I had booths right next to each other. Lucky me! I was able to sample all of the syrups and my favorite is Lavender Honey. I add 1 oz of the Lavender Honey syrup and fill with Mandarin Orange Sparkling Water from Trader Joe’s. I then top with mint and orange slices. It’s incredibly refreshing and delicious! (Psst: All syrups are currently 30% off on the website right now!)
  • Salty Provisions -  Artisanal infused sea salts and seasoning blends. Amy, the owner, knows salt, and oh my goodness, her creations are supremely tasty! I’m a huge fan of salt and these blends deliver savory goodness like no other. I highly recommend! My current favorites are  Double Onion + Roasted Garlic, Lemon + Dill, and Purple Haze. 
  • Old Arthur’s - Heirloom barbecue sauce with roots back 160 years. It’s rich and tangy with a hint of hickory and just the right amount of kick. The Mild version is just right for me.
