Fruit and Almond Alpine Muesli
I typically have my Powerhouse Smoothie for breakfast, but I've been mixing it up recently and have been enjoying this delicious Fruit & Almond Alpine Muesli.
I make it the night before and enjoy it the next morning topped with blueberries.

Ingredients
- 2/3 cup yogurt (not Greek, we use cashew-milk yogurt)
- 2/3 cup milk (we use cashew milk)
- 1 tsp pure vanilla extract
- Pinch of coarse salt
- 1 1/2 cups old fashioned rolled oats (not quick-cooking)
- 1/4 cup + 1 tablespoon honey
- 2/3 cup fresh orange juice
- 2 Granny Smith apples, peeled
- 1 cup chopped almonds
- 2 cups finely chopped seasonal fruits (such as plums, strawberries, and peaches)
Directions
- Whisk together yogurt, milk, vanilla, and salt in a bowl until smooth. Stir in oats. Cover and refrigerate at least 3 hours up to overnight.
- Stir together 1/4 cup honey and orange juice in a bowl. Grate apples on the large holes of a box grater. Stir apples and almonds into juice mixture. Stir apple mixture into soaked oats until well combined. Gently mix in chopped fruit. Refrigerate 30 minutes.
- To serve, top muesli with more fruit, and drizzle with remaining tablespoon honey.
