Citrus Melon Salsa

This refreshing, fruit-forward salsa comes from my sweet neighbor Jackie—and it’s pure sunshine in a bowl! 

With juicy melon, papaya, a splash of lemon, and fresh cilantro, it’s perfect for scooping with taco chips or spooning over grilled chicken or fish. 

Light, vibrant, and totally addictive!

Ingredients:

  • 1 cantaloupe
  • 1 honeydew melon
  • 1 Tbsp. of fresh lemon juice
  • 1 bunch of cilantro
  • 2 papayas

Instructions:

  1. Slice melon in half, remove the seeds, then cut the melon into small "salsa sized" cubes. 
  2. Slice papaya into pieces, add. 
  3. Chop cilantro and add to taste. 
  4. Add 1 Tbsp of lemon juice. 
  5. Stir all together. 

Serve with scoop style taco chip so that you can scoop the salsa into the chip. This salsa is also delicious as a topping for chicken breasts or fish.
