Citrus Melon Salsa
This refreshing, fruit-forward salsa comes from my sweet neighbor Jackie—and it’s pure sunshine in a bowl!
With juicy melon, papaya, a splash of lemon, and fresh cilantro, it’s perfect for scooping with taco chips or spooning over grilled chicken or fish.
Light, vibrant, and totally addictive!
Ingredients:
- 1 cantaloupe
- 1 honeydew melon
- 1 Tbsp. of fresh lemon juice
- 1 bunch of cilantro
- 2 papayas
Instructions:
- Slice melon in half, remove the seeds, then cut the melon into small "salsa sized" cubes.
- Slice papaya into pieces, add.
- Chop cilantro and add to taste.
- Add 1 Tbsp of lemon juice.
- Stir all together.
Serve with scoop style taco chip so that you can scoop the salsa into the chip. This salsa is also delicious as a topping for chicken breasts or fish.
