BBQ "Chicken Crust" Pizza

This BBQ "Chicken Crust" Pizza is a fun, satisfying twist on pizza and an easy way to pack in a lot of protein.

The chicken crust bakes up golden and sturdy, then gets topped with smoky BBQ sauce, melty cheese, and just the right amount of crunch from red onion and bacon.

It’s cozy, craveable, and seriously delicious.

Ingredients

  • 1 pound ground chicken
  • 1/2 cup whole-milk cottage cheese
  • 1 large egg
  • 1/4 cup Parmesan cheese (I used Nutritional Yeast)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • Freshly ground black pepper
  • 1/2 cup BBQ sauce
  • 3/4 cup shredded mozzarella cheese
  • 1/4 cup thinly sliced red onion
  • 1/4 cup bacon, cooked, then crumbled

Directions

  • Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.
  • In a large bowl, combine the ground chicken, cottage cheese, egg, Parmesan, Italian seasoning, salt, and pepper. Mix well until combined.
  • Spread the chicken "crust" mixture onto the lined sheet pan, forming it into an even layer about 1/4 inch thick. Bake until the crust is firm and golden brown, about 30 minutes.
  • Remove the crust from the oven and spread the BBQ sauce in an even layer over the crust. Sprinkle with mozzarella and top with the red onion and crumbled bacon.
  • Return the pizza to the oven and bake until the cheese is melted, about 10 minutes.
  • Let the pizza cool for a few minutes before slicing and serving.
