Vegan Blondies

This week's recipe, Vegan Blondies, comes from my dear friend, Hani. 

Fun Fact: Hani and her daughter have been models in several Nourish photoshoots! We just love them.

Enjoy this healthier take on traditional Blondies.

Ingredients:

  • 1.5 cups rinsed, canned chickpeas
  • 1/2 cup nut butter
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions:

  1. Preheat oven to 350 degrees F
  2. Blend ingredients together.
  3. Pour into lightly greased (I use avocado oil) 9x9 pan or bread pan.
  4. Bake for 30-35 min, do toothpick test
  5. Top with dark chocolate chips
