Valentine's Cherry Pie

This week's recipe, Valentine's Cherry Pie, is from my teammate, Beth. She shared, "I discovered this recipe years ago when my children were small. It makes a quick, easy, and delicious Valentine treat. I lost track of where I first found it, but I still make it every year from memory because I love it so much."

Ingredients:

  • Double crust for 9 inch pie pan
  • 1-2 (21 oz) cans of cherry pie filling. Depending on how deep your pan is. 
  • 1 (11 oz) back of white chocolate chips
  • 1 egg white beaten (I consider this optional)

Directions:

  1. Heat over to 425 degrees F. 
  2. Line the pie pan with the bottom crust. 
  3. Brush bottom and sides with egg whites.
  4. Sprinkle the bag of white chocolate chips on the bottom of the crust. 
  5. Pour the cans of cherry filling into the pie crust.
  6. Top with vented or lattice crust. 
  7. Pinch the bottom and top crust together. 
  8. Brush the top with egg whites. 
  9. Bake 40 - 45 minutes or until golden brown.
  10. Delicious with ice cream.
