Sandy's Perfect Prime Rib
This week's recipe come's from my teammate's mother, Sandy! It's incredibly easy to prepare and is impressively delicious.
Beth shared, "The secret is not to open the oven door once you start roasting until you are ready to take it out. I don't know why, but it's key, and it works! This will give you a nice medium rare prime rib."
Adjust accordingly for your preferred level of doneness.

Sandy's Perfect Prime Rib
Ingredients:
- 1 Prime Rib Roast (5-7 pounds)
- 1/2 cup Butter, softened
- 2 tablespoons Salt
- 2 tablespoons Black Pepper
- 4 cloves Garlic, minced or thinly sliced
- Other seasonings of choice (such as rosemary, thyme, or smoked paprika)
Directions:
1. Preparation:
- Remove the prime rib from the refrigerator one hour before cooking. This allows it to come to room temperature for more even cooking.
2. Seasoning:
- Rub the softened butter over the entire roast, ensuring it is evenly coated.
- Season the roast generously on all sides with salt, black pepper, and garlic. If using sliced garlic, make small slits in the meat and insert the slices.
- Optionally, sprinkle additional seasonings of your choice, like rosemary, thyme, or smoked paprika.
- Cover the prime rib loosely with plastic wrap and let it sit at room temperature for one hour.
3. Preheat the Oven:
- Preheat your oven to 375°F.
4. Roasting:
- Place the prime rib in a roasting pan or a 9x13-inch baking dish, fat side up.
- Do not cover the roast.
- Bake for one hour. **Do not open the oven door** during this time.
5. Resting:
- After the initial one-hour cooking time, turn off the oven. Leave the roast in the oven for 6-8 hours without opening the oven door. This allows the roast to cook gently and retain its juices.
6. Final Cooking:
- About one hour before you plan to serve the roast, turn the oven back on to 375°F.
- Cook the roast for an additional 30-40 minutes.
7. Resting and Serving:
- Remove the roast from the oven, cover it with aluminum foil, and let it rest for approximately 10 minutes.
- Slice and serve.
