Recipe of the Week
Our teammate, Heidi, shared this week’s recipe: Chicken Cobb Salad. I absolutely love flavorful salads, especially during the warmer months, and this one looks DELISH!
Chicken Cobb Salad
2 tbsp EVOO (extra virgin olive oil)
2 tbsp red wine vinegar
1/2 tsp each salt and pepper
2 plum tomatoes, diced
1 rotisserie chicken (shred 3 cups meat)
1 avocado, diced
4 slices cooked bacon, broken into pieces
1/4 cup crumbled blue cheese
2 hard cooked eggs, grated
In a large bowl, combine the EVOO, red wine vinegar, salt, and pepper. Gently stir in tomatoes, chicken, avocado, bacon and blue cheese. Serve over lettuce and top with grated hard cooked egg.
Wellness Practice: Sticky Note Reminders
Grab some sticky notes and your favorite pen or marker. Write down five messages of self-kindness. Here are a few ideas if you need help:
- I am allowed to be powerful.
- My feelings and thoughts matter.
- I love myself exactly as I am.
- I am doing my best and it is enough.
- I have something special to offer the world.
Put these notes on your mirror, in a notebook, or anywhere you will see them often!
