Katie on our team shared this week’s trifecta recipe - fast, easy, and delicious!
Burrito Bowls in the Instant Pot
- 2-3 Chicken Breasts
- 1 1/2 Cups Low-Sodium Chicken Broth
- 1 Packet of Taco Seasoning
- 1 Packet of Ranch Seasoning
- Sprinkle of Garlic Powder
- 1 Can of Corn, Drained
- 1 Can of Black Beans, Rinsed
- 3/4 Jar of Salsa (I use Pace Picante Medium)
- 1 1/2 Cups Rice
- Optional Toppings: Chopped Onion, Black Olives, Shredded Cheese, Sour Cream
Tenderize 2-3 chicken breasts. Slice in half if too thick. Then, cut into cubes.
Spray the Instant Pot basin with cooking oil. Add ½ cup low sodium chicken broth and chicken cubes.
- Taco Seasoning
- Ranch Seasoning
- Garlic powder
- Black Beans
- Remaining chicken broth
Fully submerge and stir ingredients. Set cook time to 9 minutes. Release pressure. Fluff and add toppings. Ole!

Wellness Practice: Diamond Painting
I found a new activity that feels like a wellness practice: Diamond Painting.
Diamond painting is a combination of cross-stitch and paint-by-numbers. You use an applicator to apply hundreds of sparkling resin rhinestones, one-by-one, on an adhesive color-coded canvas painting. The end result is a vivid, shimmering work of art.
Since I’m not very artistic, this is the perfect creative outlet for me. I’m making something beautiful without too much thought on “what to put where.” It’s relaxing and rewarding.
