Heidi's Favorite Recipe
I really enjoy this Marinated Cucumbers & Onions recipe. It's fresh, crisp, and delicious. Plus, it goes really well with grilled foods.
Ingredients
1 cup ice cubes
1/3 cup water
3/4 cup white distilled vinegar
3 tbsp sugar
2 tsp basil
3/4 tsp salt
Small red onion, thinly sliced
Medium cucumber, thinly sliced
Lettuce
2 tomatoes, cut into wedges
Directions
In a medium glass bowl, combine ice cubes, water, vinegar, sugar, basil, and salt. Stir until sugar is dissolved. Add red onion and cucumber. Refrigerate until ready to serve. Remove with slotted spoon and arrange on lettuce with tomato wedges. Serves 4.
