Recipe of the Week

Cranberry Coleslaw

This week's recipe, Cranberry Coleslaw, comes from Nourish's very own, Katie!

Katie shared, 'This recipe is seasonless. We make it at least twice a year to pair with ham and turkey at big gatherings. It's also amazing with grilled chicken during the summer. Best part?! The leftovers are even better than the day you serve it. Yum!'

Ingredients

4 cups shredded red cabbage

4 cups shredded green cabbage

¼ to 1/2 cup red onion, thinly sliced

1 cup dried cranberries

Dressing

1/3 cup apple cider vinegar

1/3 cup vegetable oil

1/3 cup sugar

1 tsp whole celery seed (Katie always adds a pinch more because she loves it!)

Directions

1. In a large bowl, toss together the cabbage, cranberries, and onions.

2. Assemble your dressing and whisk thoroughly.

3. Pour over slaw, cover, and refrigerate from 4 to 12 hours (can also chill overnight).

4. Before serving, drain off any excess dressing.

Spring Break 2023

Wisconsin Dells sign

Last week, Scott, Emma, and I headed to Wisconsin Dells for a Spring Break getaway!

Stay

We stayed at the Great Wolf Lodge. It has a huge indoor waterpark with 13 slides and 9 pools. Plus, it was a tropical 84 degrees. Ahhhh. We attended the Dance Party (with bubbles!) every night and had so much fun learning new moves.

Eat

Scott, Emma, and I have a variety of food sensitivities, so we can't just eat anywhere, especially in a town that loves its cheese curds, ice cream, and pizza. I spent a lot of time researching places that could accommodate us. We ate at the following restaurants and really enjoyed them.

Play

We were up against some not-so-awesome weather when we were there (i.e., rain, wind, sleet, and snow), so we needed to stay indoors. Outside of the water park, here's how we played.

We also hung-out at the local Starbucks and read, played at the arcade, and relaxed in our room. I watched several episodes of Queer Eye on Netflix. Have you seen this show? It is so incredibly heartwarming.

Was it the most adventurous trip ever? Definitely not. However, it was a total treat to getaway with my loves and spend such quality time with them.
