Buffalo Ranch Chicken Tater Tot Casserole
This Buffalo Ranch Chicken Tater Tot Casserole is full of all the flavors of classic buffalo chicken, but inside a casserole with crispy tater tots and cheese on top.
I was easily able to make this recipe dairy-free with a few substitutions.
Enjoy!
Ingredients
- 2 cups cooked chicken (shredded or chunked)
- 1/2 cup buffalo sauce (I used this dairy-free recipe)
- 1/2 cup ranch dressing (I used this paleo recipe)
- 1/4 cup sour cream (I used plain coconut yogurt)
- 1/2 cup finely diced celery
- 1/4 cup finely diced red onion
- 1 teaspoon garlic powder
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
- 2 cups shredded cheddar cheese (I used vegan cheese)
- 1 bag (32 oz) frozen tater tots
- crumbled bleu cheese & chopped chives (optional garnish)
Directions
- Preheat the oven to 375℉. Spray a 9×13-inch baking dish with cooking spray. Set aside.
- In a large bowl, stir together the shredded chicken, buffalo sauce, ranch dressing, sour cream, celery, red onion, garlic powder, salt, and pepper until combined well.
- Spread the chicken mixture evenly into the prepared baking dish. Sprinkle 1 cup of the shredded cheddar cheese over the top of the chicken mixture.
- Arrange the frozen tater tots in a single layer over top, making sure to cover the chicken mixture completely.
- Bake for 30-35 minutes, or until the tater tots are golden brown and crispy.
- Remove the casserole from the oven and sprinkle the remaining 1 cup of shredded cheddar cheese over top the tater tots. Place it back into the oven for 1-2 minutes or until the cheese is melted.
- Remove the casserole from the oven and let it cool for 5 minutes before serving. Garnish the casserole, or each individual serving, with crumbled bleu cheese and chopped chives (if wanted), and/or additional buffalo sauce or ranch dressing.
