Sweet and Crunchy Peanut Salad

Looking for a flavor explosion in a bowl? This is it!

This Sweet and Crunchy Peanut Salad delivers the perfect balance of crisp, fresh textures and a velvety-smooth peanut (or almond butter) dressing that ties it all together.

It was a massive hit at my house—Scott, Emma, and I all loved it so much we went back for seconds (and, ahem, thirds).

Ingredients

Dressing

  • 1/4 cup apple cider vinegar
  • 1/4 cup soy sauce or coconut aminos
  • 1/4 cup peanut butter or almond butter
  • 2 tbsp honey
  • About 2 tbsp warm water to thin out

Salad

  • 6 cups shredded cabbage, Brussels sprouts, or bok choy, raw and chopped well
  • 1/4 cup chopped red onion or scallions
  • 2 tbsp pomegranate seeds or raisins or dates, chopped
  • 2 tbsp peanuts, sunflower seeds, pecans, hemp seeds, or almonds, chopped and slivered
  • Any combination of cherry tomatoes, yellow bell pepper, shredded carrots, edamame, sliced cucumbers
  • Optional: cooked chicken breast, chopped

Directions

  1. Chop salad ingredients and add them to a bowl.
  2. Mix dressing ingredients in a separate bowl.
  3. Pour dressing over salad, toss, and enjoy!
