Sweet and Crunchy Peanut Salad

This Sweet and Crunchy Peanut Salad delivers the perfect balance of crisp, fresh textures and a velvety-smooth peanut (or almond butter) dressing that ties it all together.
It was a massive hit at my house—Scott, Emma, and I all loved it so much we went back for seconds (and, ahem, thirds).
Ingredients
Dressing
- 1/4 cup apple cider vinegar
- 1/4 cup soy sauce or coconut aminos
- 1/4 cup peanut butter or almond butter
- 2 tbsp honey
- About 2 tbsp warm water to thin out
Salad
- 6 cups shredded cabbage, Brussels sprouts, or bok choy, raw and chopped well
- 1/4 cup chopped red onion or scallions
- 2 tbsp pomegranate seeds or raisins or dates, chopped
- 2 tbsp peanuts, sunflower seeds, pecans, hemp seeds, or almonds, chopped and slivered
- Any combination of cherry tomatoes, yellow bell pepper, shredded carrots, edamame, sliced cucumbers
- Optional: cooked chicken breast, chopped
Directions
- Chop salad ingredients and add them to a bowl.
- Mix dressing ingredients in a separate bowl.
- Pour dressing over salad, toss, and enjoy!
