Beth’s Rhubarb Sauce
Shared by my friend and teammate, Beth, this is one of her favorite family recipes. Simple, delicious, and nostalgic—it's become a favorite in our home too. So easy. So yummy.
Ingredients:

Fresh rhubarb (any amount you’d like to make)

Sugar, to taste (I use Coconut Sugar)

Ground cinnamon, to taste
Instructions:

Chop the rhubarb into small pieces.

Place the rhubarb in a saucepan and add just enough water to cover it evenly.

Bring to a boil.

Once boiling, add sugar to taste—start with a generous sprinkle over the top.

Add cinnamon (a few good shakes) and stir.

Bring to a boil again, then simmer until the rhubarb softens and becomes saucy. The texture should be loose, not too thick.

Taste and adjust—if it’s not sweet enough, simply add more sugar and bring it back to a boil.

Let cool and enjoy!
Serving Ideas:
Delicious on its own, or spooned over yogurt, ice cream, oatmeal, or pound cake.
