Open-Faced Boursin & Tomato Bagel
After seeing beautiful tomato sandwiches in a few of my magazines, I was inspired to create my own. This simple, fresh breakfast or lunch is packed with flavor. Creamy herb cheese, juicy tomatoes, and peppery microgreens make every bite delicious—and it's the perfect way to enjoy fresh summer tomatoes.
Ingredients:
- 1 onion bagel, toasted (I buy these millet & flax GF bagels)
- Boursin Garlic & Fine Herbs cheese (I use the non-dairy version)
- Handful of microgreens
- 1 beefsteak tomato
- Himalayan salt, to taste
Directions:
- Toast the onion bagel and place both halves cut-side up.
- Spread a generous layer of Boursin Garlic & Fine Herbs cheese over each toasted half.
- Top with a layer of fresh microgreens.
- Slice the beefsteak tomato into thick slices. Sprinkle the tomato slices with Himalayan salt.
- Arrange the salted tomato slices over the microgreens.
- Serve immediately and enjoy!
Optional: Finish with freshly cracked black pepper, a drizzle of extra virgin olive oil, or a few fresh basil leaves for even more flavor.
