I love, love, love this recipe! I’m certain I’ve made it no less than 22 times. I sometimes fill a bowl with spinach just so I can enjoy this Maple Dijon Vinaigrette Dressing.

It’s made with a few simple ingredients and is bursting with flavor, It’s lightly creamy in texture, but still dairy-free. Enjoy!

It’s that time of year when I sing the praises of Dandelions!

They might be considered weeds by some, but they're actually pretty cool plants. Did you know that dandelions provide an early source of food for bees and other pollinators? Plus, their simple flower structure makes it easy for busy bees to get what they need. And that's not all - dandelions are also a habitat for beneficial insects like ladybugs and lacewings, and their roots can help aerate the soil and bring up nutrients.

Have you heard of the "No Mow May" campaign?

This movement encourages people to let their lawns grow wild during the month of May, providing crucial nectar and pollen to early season pollinators. It started in the UK but it's now spreading across North America! Some cities and towns are even suspending their weed ordinances for the month to support the movement.

But we get it - not everyone can participate in “No Mow May.” If you can't commit to a full month without mowing, don't worry! There are still plenty of steps you can take to support pollinators and other wildlife. Maybe mow less throughout the year or add some wildflowers to your lawn to provide even more food and habitat.

In the end, it's the little things we do for the environment that can make a big difference. So, next time you see a dandelion, please don’t reach for the weed killer. Take a moment to appreciate all the good it's doing for our planet, and maybe even let your lawn go a little wild this May!
