I am the proud owner of a new-to-me electric bike! I first rode an e-bike this summer during our trip to the Apostle Islands and loved zipping all around. Now, I’m zipping all around the North Shore and having THE BEST TIME!

Riding the e-bike makes me feel absolutely giddy! It’s like having magical turbo-boosting power at my fingertips!

I’m certain what I'm feeling is pure JOY!

After a few weeks of not feeling so great, experiencing this type of JOY feels extra special. Friends, please allow yourself time to do something that brings you JOY.

You don’t need permission. You don’t need to earn it. It's yours for the taking. Choose JOY.

Twice Baked Sweet Potatoes

Twice Baked Sweet Potatoes in a pan

Scott, Emma, and I loved these Twice Baked Sweet Potatoes! They’re packed with a savory blend of caramelized onions, spinach, and bacon.

  • I made a few tweaks to the original recipe:
  • I used the air fryer instead of the oven to cut down on time
  • I used russet potatoes instead of sweet potatoes
  • I used chicken stock in place of coconut milk
  • I added in cheese (dairy-free for us)

We ate the potatoes as our meal and then packed the leftovers for lunch the next day.

DELICIOUS!
