Green Goddess Gnocchi Skillet
If you’re looking for an easy, comforting, and nourishing dinner, this one is such a gem. Shared by my Naturopathic doctor, this Green Goddess Gnocchi Skillet is packed with fiber, protein, and a beautiful boost of greens—all in one delicious pan.
I love that it comes together with simple Trader Joe’s ingredients, including their gluten-free cauliflower gnocchi. It’s the kind of meal that feels cozy and satisfying while still supporting your wellness goals.
Easy enough for a busy weeknight, wholesome enough to feel really good after eating it… definitely one to add to your regular rotation.
Green Goddess Gnocchi Skillet
4-5 servings
Ingredients:
- 2 packages of Trader Joe’s Cauliflower Gnocchi (frozen)
- 2 TBSP olive oil
- 1 container of Trader Joe’s Vegan Kale, Cashew, and Basil Pesto
- 1 bag of Power to the Greens (mix of kale, chard, spinach, and collards; could also use bag of spinach)
- 1 package of Trader Joe’s Chicken Meatballs, cut into halves
- 1 can cannellini beans, drained and rinsed
- 1/2 cup finely shredded fresh Parmesan cheese (optional; can use nutritional yeast if dairy-free)
- Chopped parsley for topping (optional)
Instructions:
- Preheat oven to 400 degrees F.
- Heat a large oven proof skillet over medium heat with olive oil. Add the frozen cauliflower gnocchi to the skillet in a single layer. Cook the gnocchi, flipping occasionally, about 3-4 minutes.
- Add the whole container of pesto to the skillet and reduce the heat to low.
- Stir in the bag of greens.
- Add the beans and chicken meatballs. Mix well. After cooking over low heat for a couple of minutes, gnocchi should be almost cooked through.
- Remove from heat and top with parm (optional).
- Transfer the skillet to the oven and bake x 8 minutes.
- Top with fresh herbs if desired.
