Green Goddess Gnocchi Skillet

If you’re looking for an easy, comforting, and nourishing dinner, this one is such a gem. Shared by my Naturopathic doctor, this Green Goddess Gnocchi Skillet is packed with fiber, protein, and a beautiful boost of greens—all in one delicious pan.

I love that it comes together with simple Trader Joe’s ingredients, including their gluten-free cauliflower gnocchi. It’s the kind of meal that feels cozy and satisfying while still supporting your wellness goals.

Easy enough for a busy weeknight, wholesome enough to feel really good after eating it… definitely one to add to your regular rotation.

Green Goddess Gnocchi Skillet

4-5 servings 

Ingredients:

  • 2 packages of Trader Joe’s Cauliflower Gnocchi (frozen)
  • 2 TBSP olive oil
  • 1 container of Trader Joe’s Vegan Kale, Cashew, and Basil Pesto
  • 1 bag of Power to the Greens (mix of kale, chard, spinach, and collards; could also use bag of spinach)
  • 1 package of Trader Joe’s Chicken Meatballs, cut into halves 
  • 1 can cannellini beans, drained and rinsed 
  • 1/2 cup finely shredded fresh Parmesan cheese (optional; can use nutritional yeast if dairy-free)
  • Chopped parsley for topping (optional)

Instructions:

  1. Preheat oven to 400 degrees F.
  2. Heat a large oven proof skillet over medium heat with olive oil. Add the frozen cauliflower gnocchi to the skillet in a single layer. Cook the gnocchi, flipping occasionally, about 3-4 minutes.
  3. Add the whole container of pesto to the skillet and reduce the heat to low.
  4. Stir in the bag of greens.
  5. Add the beans and chicken meatballs. Mix well. After cooking over low heat for a couple of minutes, gnocchi should be almost cooked through. 
  6. Remove from heat and top with parm (optional).
  7. Transfer the skillet to the oven and bake x 8 minutes.
  8. Top with fresh herbs if desired.
