Birthday Girl Piña Colada

Emma has never been much of a birthday cake girl… but a piña colada? That’s her kind of celebration! (Non-alcoholic, of course!)I made one for her yesterday in anticipation of her birthday—and of course, we’re having another today. It’s creamy, refreshing, and feels a little extra special… just like birthdays should.This version is simple and full of tropical flavor—a fun, festive treat made for celebrating moments like these.

Ingredients (Serves 2)
  • Frozen Pineapple: 2 cups (using frozen chunks eliminates the need for extra ice, keeping it from becoming watery).
  • Cream of Coconut: ½ cup (e.g., Coco Lopez or Goya - found in the mixer aisle. It's not the same as coconut cream).
  • Pineapple Juice: ½ cup (100% juice is best).
  • Ice: 1 cup (or more, for desired thickness).
  • Optional: A squeeze of fresh lime juice to balance the sweetness.

    Instructions

    Blend: Place frozen pineapple, cream of coconut, pineapple juice, lime juice, and ice into a high-powered blender.

    Process: Blend on high for 30-60 seconds until completely smooth and creamy.

    Adjust: If it is too thick, add a splash more pineapple juice. If too thin, add more frozen pineapple or ice.

    Serve: Pour into a hurricane glass, garnish with a pineapple wedge or strawberry and serve immediately.
